After a long time I returned to eat a gluten-free pizza, and I must say that the experience offered by I Dissonanti went far beyond my expectations. Although I am not celiac, I have a slight intolerance to gluten and refined flours, and I am used to alternative doughs that often turn out dry, crumbly or too compact. Here, however, I found what I can define without hesitation as the best gluten-free pizza I have ever eaten.
The dough is surprisingly soft, well leavened and with a pleasantly elastic consistency, which holds the toppings perfectly without "going mushy". The cooking is impeccable, with the right balance between crunchiness and softness. The choice of ingredients is also of the highest quality, from tomatoes to mozzarella, through cold cuts and very fresh vegetables.
Another very appreciable aspect is the wide selection of gluten-free beers, which is far from obvious, alongside non-alcoholic beers and the classic traditional options. An attention that demonstrates a concrete sensitivity towards those with particular dietary needs, without making them feel "different".
The place is well-kept, welcoming and the service is attentive, courteous and well-informed about gluten-free options, an element that always makes the difference when dealing with food intolerances or sensitivities.
I highly recommend I Dissonanti not only to those who follow a gluten-free diet, but also to those who are simply curious to discover an alternative dough made with skill and passion. A virtuous example of how inclusive cuisine can also be extremely tasty.
As a celiac I find that the place fully satisfies the desire for fried dumplings, so good that I doubted it was gluten-free, and tigelle, very kind and attentive staff, perfect cocktail, highly recommended, five well-deserved stars
Good food and a very friendly waiter. We don't speak Italian, so the waiter who speaks English helped and advised us.

I found this place on the internet looking for places with AIC certification since we recently moved to the area and I was very impressed. We ordered takeaway and they were very punctual, the food is very good and reflects the descriptions. The only note or "criticism" is that I did not find the AIC certification visible inside the place (or maybe I did not see it but I was looking for it) and this great opportunity can only be found by looking at the entire website which perhaps not everyone does. I understand that for those who do not have a celiac in the family or do not know how to treat celiac disease they may think that the food is "less inviting" to the point of considering another place but for those who enter the place for the first time without consulting the site, they will not immediately think that it is an AIC place. I admire the places that offer us these possibilities! Thanks for everything and keep it up!!
Fusorari Cibi & Viaggi is a unique restaurant in the heart of Modena, perfect for those who love good food and welcoming atmospheres. The menu offers original dishes, with vegetarian and gluten-free options, accompanied by excellent wines and cocktails. The staff is friendly and the travel-inspired environment makes the experience even more special. Highly recommended!

At the Modena tourist office they gave me a list of where to eat gluten-free and this is the first restaurant that came out but, when I got there, they told me that the kitchen is contaminated and they do not guarantee that the food is gluten-free!! Very difficult to eat gluten-free in Italy!!!! 😬

I went to this place for a birthday and being celiac I was skeptical as they were not AIC certified. I immediately changed my mind, the owner was very kind and brought me a sheet of paper on which to mark the dishes so that I could prepare them gluten-free where possible.
I recommend it very much.
