Gluten free options galore! Vegetarian also. We loved the food and our server, Kaitlin, was hilarious and made our time there amazing. We wish we had eaten all of our meals here on our trip.

Over the years I've looked to Workshop as a special dining experience, and they've never failed to deliver. The indoor dining room is my preference, with brutalist-like cement partitions and tables, uniform modern lighting, and crisp white walls, but dining in an outdoor patio under a canopy of warmly lit trees is lovely too. They smartly have plenty of outdoor heaters for cool desert nights if al fresco is your preference. The menu is always thoughtful and creative, with many different options, without feeling the kitchen is overextending itself for the sake of variety. All the front of house staff are professional and welcoming, without the sense that they aren't being genuinely themselves. The waitstaff are considerate and knowledgeable about food restrictions (for me my experience is with gluten free), and service is quick and efficient without any sense of feeling rushed. The bar feels intimate but not crowded, and the drink menu is clever without the slightest hint of gimmick. I've heard other bartenders at high-end cocktail lounges in the city speak highly of the person in charge of the bar as well, which for me holds much merit. This is the only restaurant in the Coachella Valley that I'd recommend without any reservations (as in having a doubt; definitely make a reservation well in advance).

Food was great. Starters of octopus, pear salad, and roasted carrots were delicious. Mains of pork chop, cauliflower steak, and milanese were generous and well done. Service we found to be bad from start to finish. To start: we were ignored at check in, then told to follow someone to our table.. except the staff member was first showing someone else to *their* table; we didn't know whether we were coming or going. We felt there was no sense of genuinely welcoming guests, just shuttling people through. We were eventually seated right by the toilets. Someone has to sit there, I suppose; but there were other tables available, and our sense was that this was restaurant policy for diners with children. (We had our 11 and 8 year old with us. The next table along had a similarly aged child, hence the inference.) The table was noisy and by the thoroughfare to the toilets and kitchens. Not a great start. From there, the only word that came repeatedly to mind was: Clunky. Drink order took ages; our server didn't return to take our food order; the order was eventually taken by someone else; food when brought out was dumped on table unceremoniously and shoved in and around our drinks and side plates etc; nobody throughout asked about allergies (one of us was gluten intolerant. Fortunately gluten free options were clearly marked on menu.. but server still dished out bread to everyone.); original server did not once ask if we needed more drinks - I eventually collared him and asked for a glass of wine; he seemed surprised, as was I; etc etc. The bottom line here is that, despite the really good food, this venue evidently has no genuine focus or concern on customer service. Staff moved around at pace, but with little or no focus on customer experience. Ours was terrible. They seemed confused when the tip reflected this. Perhaps they should take a moment to train their staff properly and reorient the service to match the great work being done by the kitchen.

Our first visit to Copley’s was a pleasant surprise. We sat outside in January surrounded by heaters, plants and people. I did wish I had dressed a little warmer. Our server was efficient, helpful and even a little fun. The food was fantastic. Imagine my gluten-free delight when the Caesar Salad came with croutons made out of pineapple (« traces of tropical »). As the former home of Cary Grant, the inside is filled with different nooks and crannies. Overall a very special evening.

I can't thank Trio Restaurant enough for catering our family Christmas celebration! They did an absolutely incredible job, and it was one of the highlights of our entire week. We had 19 people in our group, and Trio took care of every detail. Night one featured a delicious spaghetti dinner with mushroom ravioli, and night two was a spectacular three-course meal, including braised short ribs and Scottish salmon. What truly stood out was how accommodating they were—offering gluten-free, vegan, and dairy-free options for some of our family members without any hassle. A special thank you to Josh and KC, who not only cooked but also served us with such warmth and professionalism. So many family members came up to me after dinner saying it was the best meal they’d ever had! Your staff was incredibly kind, courteous, and professional, exceeding all expectations. I’m so grateful for all your help throughout the year as we planned this event. Your flexibility, guidance, and commitment to making our celebration perfect truly made a difference. The meal was unforgettable, and we’ll be talking about it for years to come!
